做法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏米。用清水把(bǎ )陈皮(pí )泡软,拍裂一小块姜,热锅,用姜块在(zài )锅上(shàng )擦一遍,放两勺油,待油(yóu )六成热(rè )下鱼,煎(jiān )至微黄。煮沸(fèi )瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好(hǎo )的鲫鱼(yú )和其他材料,武火煮沸,转中(zhōng )小火煲一个(gè )半(bàn )小时,下盐(yán )调(diào )味即可品尝。 -
