做法:洗净宰好鲫鱼,洗净淮山和薏(yì )米(mǐ )。用清水把陈皮泡软(ruǎn ),拍裂一小块(kuài )姜(jiāng ),热(rè )锅,用姜(jiāng )块在锅上擦(cā )一遍,放两(liǎng )勺(sháo )油,待(dài )油(yóu )六成热下鱼,煎至微(wēi )黄。煮沸瓦(wǎ )煲(bāo )里的清水,放入煎煮好的鲫鱼和其他材料,武火煮沸,转中小火煲(bāo )一个半小时,下盐调(diào )味即可品尝。 -
