做法:洗(xǐ )净宰好(hǎo )鲫鱼,洗净(jìng )淮(huái )山和薏米。用清水把陈皮泡软,拍裂一小(xiǎo )块姜,热锅,用姜(jiāng )块在锅上擦一遍,放两勺油,待油六(liù )成热下鱼,煎至微黄。煮沸瓦(wǎ )煲(bāo )里的清(qīng )水,放(fàng )入煎煮好的鲫鱼和其他材料,武火(huǒ )煮(zhǔ )沸,转(zhuǎn )中小火煲一个半(bàn )小时(shí ),下盐(yán )调味(wèi )即可品尝。 -
