做法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软,拍裂一小块姜,热锅,用姜块(kuài )在锅上(shàng )擦一遍,放(fàng )两勺(sháo )油,待油(yóu )六成热(rè )下鱼,煎至微黄。煮沸瓦煲里的清水,放入(rù )煎煮(zhǔ )好(hǎo )的鲫(jì )鱼和(hé )其(qí )他材料,武火煮沸,转中(zhōng )小火煲一个半小时,下盐调味即可品(pǐn )尝。 -
