做法(fǎ ):洗净宰(zǎi )好(hǎo )鲫鱼,洗净淮山和薏(yì )米。用清水(shuǐ )把陈皮泡软,拍裂一小(xiǎo )块姜,热(rè )锅,用姜块在锅上擦一遍,放(fàng )两勺(sháo )油,待油(yóu )六成热下鱼,煎至微黄。煮沸瓦煲(bāo )里的清水,放入煎煮好的鲫鱼和其他材料(liào ),武火煮沸,转中小(xiǎo )火(huǒ )煲一个半小时(shí ),下盐调味即可品尝。 -
