做(zuò )法(fǎ ):春笋切成片(piàn )后加少许(xǔ )盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入生(shēng )姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左右。再加(jiā )入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖(mèn )。 -
