做法:洗净宰好鲫鱼,洗净(jìng )淮山和薏米。用(yòng )清水把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用(yòng )姜块在锅(guō )上擦一遍(biàn ),放两勺油,待油六成热(rè )下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武火煮(zhǔ )沸,转中小(xiǎo )火煲一个半(bàn )小时(shí ),下盐(yán )调(diào )味即可品尝。 -
